Teaching My Plex Server to Speak Latino - Spanish Audio for My Son, Original for Everything Else

I wanted my *arr stack to keep everything in its original language with subtitles, except the Disney, Pixar, Marvel and Harry Potter stuff I'll be watching with my 3-year-old, which needs Latin American Spanish audio too. The plan that looked fine on paper, a tracker that labeled every release as Spanish-only, a quality profile that could quietly replace a Spanish file with an English one, and how custom-format scores ended up doing the job a language setting couldn't.
